Crushed Peas & Broad Beans on Toast

Ingredients:

1 Chtoura Garden Green Broad Beans in Brine

1 Chtoura Garden Green Peas

4 tbsp Chtoura Garden Olive Oil, plus 1 tbsp for drizzling

1 cup Chtoura Garden Lemon Flavor Seasoning

1 tbsp grated cheese

Small handful mint, leaves chopped

1 tsp dried chilli flakes

4 slices crusty bread

1 garlic clove, halved

Method:

1. Cook Chtoura Garden Green Broad Beans in Brine in boiling salted water for 3 minutes, then drain and refresh under cold water.

2. Cook Chtoura Garden Green Peas in boiling salted water for 2 minutes, then drain and add to Chtoura Garden Green Broad Beans. Mash roughly with a fork. Pour in 4 tbsp of Chtoura Garden Olive Oil, then add 1 cup of Chtoura Garden Lemon Flavor Seasoning and season with a little salt. Cool the mixture to room temperature.

3. Add the cheese, mint and chilli. (Taste and adjust the seasoning if necessary).

4. Grill or toast the bread until golden on both sides, then rub one side of each slice gently with the cut garlic to flavour it. Drizzle over the remaining 1 tbsp Chtoura Garden Olive Oil and top with Chtoura Garden Green Broad Beans in Brine and Chtoura Garden Green Peas, grating over a little extra cheese if liked.
